The sicilian black bee , for millennia Sicily was populeted by it, stands out for its dark colour and its little wings. It survived the ice ages, the man’s pollution and the gobalization, risking its total extinction in the 1970, when the sicilians started to prefer and import the “Apis millifera" a bee of the north of Italy. The sicilian bee is very docile and productive, even at high temperatures, and develops early hatching: as in the presence of winter blooms the black bee behaves as it is spring.

The honey that it produces, also has antioxidants from three to ten times higher than any other honey and antibacterial and anti fungal substance.

In our bar, with no added sugar, a precious single origin cocoa is enhanced with carob honey of Sicilian black bee. An honey, that is in the Slow food foundation produced by Carlo Amodeo, with a strong taste,a creamy texture whose aroma is reminiscent of the fruit of the carob tree. The return to the origins and traditions of our land is an exciting journey.
